Outback pub work combines familiar bar and food service with the routines of a small regional community. Some roles also cover rooms or breakfast service, so clarify the mix of duties and living arrangements before committing to a season.
You enjoy hospitality and want to get to know a smaller community while working behind the bar or serving food.
The trade-offs
Closing shifts and handling difficult customers remain part of pub work. Shared housing above or near the venue can limit privacy and quiet time.
What does the work involve?
You may serve drinks and meals, clear tables, stock fridges and help with guest rooms. Small venues often combine front-of-house and housekeeping, so ask whether the position is mainly bar work or a genuine mix.
Closing duties, cash reconciliation and busy evening service are common parts of pub work. Learn how the venue handles intoxicated customers, complaints and incidents, including when a manager takes over.
Will it fit my trip?
Pub housing may be above the venue or shared with coworkers. Confirm privacy, quiet hours, meals, rent, departure notice and whether there is transport to essential services. Regional pub work is not automatically eligible tourism and hospitality specified work.
Alcohol-service work needs an RSA accepted in the state or territory. Busy small pubs often prefer previous bar or customer-service experience because there may be few staff on each shift.
What else will I do?
An all-rounder can cover meals, room cleaning and stock as well as drinks. Kitchen, housekeeping and dedicated bar vacancies have different entry requirements.
Which training is worth doing?
Food-handler skills
Food-handler learning covers hygiene, contamination, temperature control and safe storage. A food-safety-supervisor certificate is a separate responsibility; it is not the standard starting qualification for every kitchen assistant.
Free, non-accredited Victorian Government online learning covering hygiene, safe storage, contamination, allergens and cleaning. Useful preparation for food-handling duties; it is not a Food Safety Supervisor qualification.
Classroom RSA training in Sydney and surrounding suburbs. Published price: $190 (14 October 2026). A USI and identification are required. This is a NSW course; other states have their own recognition rules.
Clear to Work lists online WA and NT RSA courses at $24.50 each. The WA course requires photo ID, a USI and written and video assessments; optional express marking costs extra. Select the course for the state or territory where you will serve alcohol.
TCP’s NSW RSA course covers SITHFAB021: $190, seven hours plus breaks, in Sydney CBD and listed suburban venues. A USI, required identification and an assessment device are needed. Checked 23 October 2026. Other states: compare RSA providers and recognition.
